I'm wanting to get a filter/list/report of all the trello cards I'm watching either within a single board, or across multiple boards within a single workspace.

Hey @WG Trello Admin - Sadly, you can't filter the cards you're currently watching on your board or other boards you're a member of. I've passed your feedback on to our team as a feature request for the team to look into.
