I'm using the Email-to-Board feature, and it works great. However, I have a question about the email address that Trello generates for each board.
The generated email address always starts with my username (for example, jmarchiori...) instead of something related to the board name.
This creates two issues for my team:

Taking your three options in order: you can generate a new one, but you can't customize the text or make it start with the board name. From the board sidebar, under More then Email-to-board Settings, you can regenerate the address and the old one stops working, yet it will still begin with your username and a random string. Trello doesn't expose that alias for editing.
The reason is that it isn't really a "board" address, it's yours as a member of that board: every member gets their own, and a card created by email is attributed to whoever owns the address it was sent to. So the idea of teammates sharing one board address doesn't fit how the feature works; each person should grab their own from the same Email-to-board Settings rather than use yours.
For the two real pains, remembering it and mixing it up with your Inbox board, the cleanest workaround is to save each address as a contact in your mail client under a clear name, for example "Trello Marketing board". You then pick it from your contacts instead of recalling the string, which also stops the accidental sends to the wrong board. The feature is documented in create cards by email.
