Bear in mind that you are buying a service here, you are not looking at a server that you have any control or even visibility of.
One of the points of buying a Cloud service like this is precisely that you do not have to worry about this sort of thing. If you're in a regulated field that really does require you to be able to go into this sort of thing in depth and require access to the processes, people and servers behind the service, then you should not be looking at a Cloud service.
