According to the API Documentation, there seems to be no way to update a subscriber's component subscription but to unsubscribe them and then recreate them.
The previous API allowed that through a PATCH endpoint that's not there anymore.
Am I missing something?

There's a new, authenticated endpoint to use for updating subscribed components. It's documented here:

Hi Émile, there is an endpoint in the Status API which you can use to update the components a subscriber is subscribed to.
Head over to your status page URL and append '/api' to it, then navigate to the "Subscribers" section and find "Tuning subscription components".
Example: https://acmeapico.statuspage.io/api#subscribers
To tune an existing subscription to add or remove components, submit a PATCH request with the subscriber id and a new list of components.
