extract tags from an email integration

Im working with an email integration in OG, im trying to find an easy way to pull field data from the message body in to tags?

Thanks @Nicolas Grossi I have read the guide, howevere, it is very basic and i am looking for the advanced functionality to pull data from the email body into tags (if possible, i believe it is)
