I have tried to research this as much as possible and can't find a clear answer. I was added to a company profile as an admin. I created a project and can view that project. Once I select that project it only allows me into the project settings and not the actual project. Is there a step by step on what roles/permissions need to be added in order for me to edit the project? Thanks.

What type of project did you create? Find that information in the Type column on the View All Projects page under the Projects menu. Modification of permissions depends on the project type.
Are you working with a Free Jira subscription or a paid Jira subscription? In a free subscription customization of project permissions is not supported.

Good to know that project permissions are limited. When I go to system and review project roles there are 4 that exist. Admin, atlassian-add-ons, service desk and service desk team.
When I go to my project and go to people, it shows myself and I am able to select 3 out of 4 roles. Atlassian-add-ons is not available.
The next section in my project is Permissions. I added myself as a single user along with all 4 of those roles to each permission section.
After reviewing all of that, I still cannot go back into the project and edit anything.

Being assigned to the role directly in the JSM project does not necessarily give you the access you want.
You need to have a product license to be a Jira Service Management Agent and interact with the Jira Service Management specific features, like Queues.
A user with the ability to manage your user account from https://admin.atlassian.com needs to give your user the User (agent) role for the Jira Service Management product.
Note that in the Free subscription there can be only 3 people granted Jira Service Management Agent licenses in the entire instance. If your company exceeds that, your company will have to start paying for the product.
