But where are the rest of the bulk change options? Anything that could be changed on a single issue, used to be available through "bulk change" - "Edit issues". The bulk change option seems to have disappeared completely with right-click now only offering a few limited possibilities. I'd love to see the customer feedback your product managers based that change on, because I can't imagine that there are so few people using this feature as to make it obsolete.

Thanks for leaving feedback on our new features! Currently, both these capabilities should be available to all our users on Team Managed Projects, who aren’t on Release Tracks. The simple bulk edits capability is also available on Company Managed Projects, you simply have to switch to the enhanced backlog and board (more info here).
We hear your frustration around quick edits on the board not leaving enough room for you to open issues on the card. We’re looking to switch the edit mechanism for summary to a double click to avoid this issue. This will leave you more space to open and move cards, while also enabling you to update card summaries quickly, without having to open the issue view.
We’re working on this iteration now and it should be in your hands in a few weeks. Thanks for helping us improve the new feature and for bearing with us while we implement the change. We are on a company-managed project and this change seems to severly limit the options for bulk changes, so I'll stick with the old view for now, which is a shame, because some of the other changes are really good. But I use the bulk change quite often, for adding issues to a release, changing labels, adding to a Sprint, etc.
Please do add a toggle for the quick edit feature instead of just changing the interaction to a double click. Is there any substantial feedback that this is a feature that is actually requested?
A suggestion would be to pay attention to features that users actually want instead. How about this one for example - that has been open since 2018(!) with almost 2000(!) votes and no useful feedback from Atlassian what so ever. https://jira.atlassian.com/browse/JSWCLOUD-17336

We really appreciate your patience here. We’ve heard your feedback and we’ve decided to use a pencil icon to limit potential unwanted summary updates. This change should now have rolled out to all of you who have access to the feature. We hope that this will help with the frustration you felt with the new capability.
For the new bulk features, we’ve also made a couple of updates. You’ll have noticed that we’ve now separated out opening a ticket and selecting a ticket.
To open a ticket select anywhere on the card on the backlog. To select or bulk select tickets:
For Mac, hold the cmd key while you click anywhere on the ticket (or use the checkboxes).
For Windows, hold the ctrl key while you click anywhere on the ticket (or use the checkboxes).
We’ve also added back the “Bulk change” option to the dropdown in Company Managed Projects, and added the option to “Bulk change” in Team Managed Projects.
