Depending of the issue type an assignee may see it (or not). What is the best and easisest way to limit access to issues? I need some advice on this. Thanks in advance.

Welcome. You can use issue security to mark which tickets can be seen or not.

To supplement what @Benjamin stated, when you implement/setup issue security scheme configuration for your project - two things that you need to be aware:
1) By default, Set Issue Security Security permission is controlled via your project's permission scheme configuration. It means you will be able to customize it to control who can manage the issue security tagging against issues in your project. Once the field is populated, then others will see the value in the project UI when view the issues (assuming they are called out by your security level setup). You can review the permission configuration scheme for the project (Project settings >> Permissions) and decide if you want to update the "Set Issue Security" permission.
2) When setting up the security level in the scheme, make sure that you always "Administrators" role is always called in the level + the issue reporter and the issue assignee. Otherwise, once an issue is tagged with the security level, the issue visibility is locked down - only the users who are called out in the security level can see the issues.
