I mistakenly put something in Cancelled status
instead of completed status, how can I fix it?

You would need to edit your workflow in order to do that. If you have Jira admin permission, make a copy of the existing project, create a new transition out from Canceled to Completed, then associate this new workflow with the workflow scheme used by the project.

If you have the Jira system admin right, then you can edit the WF that is associated with your issue (issue type) in question and create an transition from Canceled to Completed status.

This sounds like you're using a company-managed project. For the workflow of such a project, you (well, the Jira admin) has to set up a transition to go from Canceled to the status before Completed.
Do you have a diagram of the workflow?
