Just wondering if there’s a way we can keep our colleagues looped in to Support cases that we raise through Atlassian / Jira. Both ccing them and allowing them to have access to the tickets. Currently when I search for a colleague in the existing cc field, their name doesn’t display.

Two things, your not being able to search for other users is related to not having a global permission. Please ask a Jira product administrator to give you the Browse users and groups global permission.
Second, I would suggest that the people you want to be informed stakeholders could be added as Watchers, and, depending on the notification scheme for the project, be kept informed about what is going on with tickets they are watching.
