チーム管理プロジェクトでサブタスクを作成しようとしましたが、「サブタスクを作成」を見つけることができませんでした。

プロジェクトを作成から白紙プロジェクトを作成し、チーム管理対象と企業管理対象を見比べてみたところ、企業管理対象側には「サブタスクを作成」が表示されました。
上記の動作から、チーム管理プロジェクトでは以下となる認識でよろしいでしょうか
・サブタスクを作成することはできない
・(もし作成したい場合は) リンクされた課題をcausesで紐づける
もし公式ドキュメントに記載があれば、URLをいただけるとありがたいです。

Yes, you can create sub-tasks in a team managed project. There is absolutely nothing to prevent you from doing that.
My test site is already using the new Jira navigation, so it may look a bit different, but here is a screen shot of how I can add a child issue (sub-task) to a story in a team managed project:
In the background, 2 existing sub-tasks to the story are already there, one with status to do, one with status Done.
In a site with the old Jira layout, it looks like this:

Is the information you provided about Jira (or Jira Software) ?
I tried to view the same screen in Jira Service Management but could not.
On the other hand, I tried to display the same screen in Jira, I was able to do so.
It now looks like the following screenshot.

Yes, the info I shared is indeed for Jira and not JSM. I had missed the part that your question was about Jira Service Management.
Issue types are indeed not available in team managed JSM projects. You only have Request Types there, which in company-managed projects are built on top of issue types.
There even is a feature request for this, which - funnily enough - is listed as a sub-task in the product backlog. You can track it right here: JSDCLOUD-8623
It is a pretty old request though and as issue types are not available in the team managed configuration for JSM, I would not expect this to be delivered anytime soon.

「問題のタイプ」をクリックします。これを展開すると、プロジェクトで使用可能な課題タイプのリストが表示されます。
問題の種類は最大 3 レベルまであります。サブタスクが含まれている場合は、一番下に表示されます。

Navigate to Project Settings for that project.
Click on Issue Types. This should expand to show you a list of the issue types available in the project.
There may be up to three levels of issue types. Subtasks, if they are included, will be at the bottom.
