It is confusing when writing automation rules involving emails as Jira translates the email into an unrecognizable string. Is it possible to have the actual email appear?

Due to the fact, that the automation uses the username of the user, it's not possible to use the email.
However, you can try the below add-on, that it's free and it's used to create automation.

Besides that, using it, you can create other types of automation and use the email, if you want.
