Hi there,
On my Jira cloud account upon adding a trial of the Service Desk, I've been directed to https://xxxx.atlassian.net/secure/SDOnboarding.jspa?decorator=jsd-onboarding#, selected "Let's go", then selected 'internal service desk' (I have also tried the others) and been presented with the error:
"We couldn't create your project. Something went wrong, please try again."
Is this a common problem? Is there something specific I need to do to get this to work?

The onboarding for new sites usually has the option if you already used Jira or if it’s the first time. If you select that you already used Jira, it shouldn’t create a project and you should be redirected to the main page.
Can you try going directly to the dashboard, projects or Your work page? Please, test using the links below:
If it doesn’t work, please try to create the project again, but with the developer tools on your browser open during the steps, so when the error appears, the developer tools may show a more complete error.
Also, are you the only user facing this issue? Have you tested using another browser or incognito mode?
