Is there a trigger when we unassigning a user from a ticket? I would like to recalulate the deadline of the ticket in this particular case.

If you are talking about JSM automation you could use field value change but this would be difficult to identify. I would suggest having a transition that prompts the change and kicks off the automation. This will be easier to identify and ensure that the automation is the only way to have the automation run.
