Hi guys!
I'm a complete and total neophyte in here - just opened a project for practicing while taking classes on QC.
The platform has automatically hooked me up on Kanban template, but what I really needed was Scrum.
Could you please advise on how to manage this? (in layman's terms, if possible:)))

I see that you tagged your question with jira-service-management.
Do you want to use a scrum board for your Jira Service Management project?
Or do you also have Jira Software?
In that case, you can always create a new board and choose type Scrum
First of all, go to your project where you want to create the board.
Click in the Search bar on the top right, then click on Boards in the bottom of that pop-up window (after Go to all:)
On that page, click on the blue Create board button on your right.
Next, click on the Create a Scrum board button and select 'Board from an existing project' and click Next
Then enter a Board name, select the Project from the drop-down list and choose the same project under Location.
Finally, click Create board to finish the wizard.
Now you can switch from the exiting Kanban board to a Scrum board view.

Welcome to the community. I agreed with what @Dave Mathijs suggested 100%. Keep in mind that in JSM project(s), one manages issues via the queue concept and not from the Kanban/Scrum concept as designed. Jira Software projects are designed to utilize Kanban/Scrum for issues management.
On the given Jira Software project(s), regardless if it was created using the Kanban project or Scrum project templates, one can always create both type of boards within the project out of the box. Here is a screen shot for your reference on creating board using either Kanban or Scrum type - You can also just go to your project, and click on the down arrow symbol on the right of the board and select the "Create board" option -
