How can I skip the trial and immediately buy the plan for Jira Service Management? because there are quite a lot of restrictions in the trial

Agreed - I am tun into this several times. You will need to open a support ticket with Atlassian and get them to move it over immediately. You should go ahead and pay first though. Do not let them tell you that it will just move over at the end of the trial - tell them you need it moved immediately to get past restrictions during the trial.
I will see if someone from Atlassian can come help (maybe create a support ticket for you if you cannot) since it might think you are still on a Free plan.

If you can manage your subscription using admin.atlassian.com portal.
From there you have the option to upgrade your plan to a different tier or skip the trial version and buy the version you are interested in.
