Hi,
When customers create a new request from the Service Portal we have the "Share" field to default to share within their organization.
Question1:
Can this share field be removed/hidden as it always will share any request to their organization?
Question2:
Can a specific customer (Customer Manager) be set to be able to view all request in the portal even if the requests is set not be shared by another colleague within his organization?

Question 1: As far as I know, the button cannot be removed or configured.
As far as I know Atlassian has a lot of limitations on the portal, and has some requests for improvements that we have made.
I went looking for it, and I don't know if this helps you:
I accessed the project, went to settings > Client Permissions > Client Sharing and selected "Change global settings"
Question 2:
A customer is a customer, it is not possible to customize at that level.
Only if you create an Atlassian account "Migrate to Atlassian account" and customize the account (I find it unfeasible).
If the intention is to hide everything from everyone... I would exclude organizations. And it would create a custom field (for internal control and report extraction) with the names of the organizations "radio button"
