Hello,
I have the original project A, where tickets are coming in from five differnt email addresses of our customers. However, I need to redirect one of these addresses to project B. So when this one customer submits a request via that email, it will automatically come to project B.
Is this possible? If so, how?

When you say that you have 5 different email addresses, are you saying you have 5 aliases that are all going to the single email address for the project? If that is the case then yes, it is possible. We are using Google Workspace and our email aliases are just groups where the project email is a member, so changing one email alias to a different project would just mean that we change the group membership. JSM itself does not have email aliases, so that has to be managed outside of it.
