Problems with permissions for Stitch data integration?

Hi! I'm an analytics engineer, trying to set up a data integration from Jira using the Stitch data movement tool. (Documentation for their Jira integration is here). 

I'm using a Jira service account to authenticate the integration, and I believe the account has the right permissions to access the projects we need to pull data from. However, the data we're getting from the integration is very sparse and doesn't encompass all the projects we need. 

Does anyone have experience with setting up permissions so that Stitch can successfully grab data? I'd really appreciate any advice!
