The Requests screen is quite limited and cannot be customized. That is why we created and addon - Advanced Portal Reports - which allows customers to have a customizable requests screen, where they can see all fields, sort, rearrange, export to CSV, etc. Feel free to give it a try from the Atlassian Marketplace.

Could you please tell me without the addon, by default what is sorting order? How it is defined it for all the status in my requests? I couldn't find any documentation for this.

Frankly, I have no idea what is the sorting order of the standard Requests page. When I look at it, it does not seem sorted by any of the columns, so I would guess whatever the DB query returns internally...

No idea, maybe someone from Atlassian can tell. In any case you cannot influence it, so knowing how it works will not help much.
