How is it possible to create a project that an Org Admin cannot have access to read the content? eg. we create a project discussing confidential information which Org Admin should not be able to read. As I understand it even if we don't invite Org Admin they can join any project and then be able to read the content. Can someone please clarify if this is correct and/or suggest any possible solutions? Thanks.

Go to Settings > System > Global permissions
Remove the Site Admin from the Administer Jira permissions. Then also make sure the Site Admin group is not used in the Permission scheme at all. Be sure to test it with someone to make sure they can't see the project or any test issues before putting the confidential information in.
