Don't quite understand what do you mean by "management screen". Please clarify that.
But in order to export specific fields, form the search results choose the columns to make them visible, and then choose to export only the visible columns.

Since you are working on JSM, I wouls assume that we are looking at a queue. In order to modify queues' fields you have to follow these instructions:
From your service project, go to Queues.
Select the queue you want to edit.
On top-right of your page, select > Edit queue.
Edit Name, Issues to show, Columns. Note that you will see a live preview of the updated issues that appear in this queue as you edit it.
Select Save to confirm your changes.
