We have a standard drop-down for IT tickets indicating what plant location the problem is at. We want to kinda add/change some options to account for the increase in remote workers. I'm having trouble finding where I can edit those options.
In looking at some community discussion, they reference a "Configure" option on the Custom Fields screen but I'm not seeing it. Not sure if it changed or what. I am a Project Administrator but not a Jira Administrator.
On cloud it will depends if you project is a Team managed one or more classic.
You will be able to edit the avaialble option if it's a team managed project but would need to ask a jira admin in case it's a more classic project.

Hope you are doing well.
Custom fields are considered global entities. i.e., there is a good chance they're used in multiple projects. Thus, ideally, a project admin will not be able to modify them. Do get in touch with your Jira administrator for the changes :)

I agreed with @Florian Bonniec suggested, just for further clarification -
"classic project" means - Company Managed project where one can share global custom fields, WFs and other project configurations.
"Team Managed project" - on this side - its custom fields are only local for the project and not sharable with other projects. For this type of project, Jira admins (not project admins) will not see those fields via the global configuration settings unless they have project admin right against the project if needed.
