Is it possible in JIRA Service Desk to create multiple SLA's and then link Organizations to different SLA's. For example can I create a Platinum, Gold and Silver SLA and link Organization a to Platinum, Organization b to Silver etc..

Yes you can. The SLA provide a full JQL to define the criteria. You can use the jql:
reporter in organizationMembers("")
Put the organization name in the quotes.
