Is there any product on Atlassian (DC) that could provide an audit trail to capture all the changes that happened on the configuration, fields values .. ets
E.g. Are changes to an incident's priority recorded to an audit trail

Each and every issue/ticket in Jira has a history which you can access when you view that issue and scroll down.
Changes to the issue fields, comments, edits, transitions are captured here.

You didn't ask for that before, you asked if there was a history trail (an audit)
Yes, there are historical reports, but you probably want to look at apps that can provide raw dumps of the history (they're not actually that useful though, the best thing to do for an "audit" is look at the system)

as per my knowledge Atlassian Access do that on cloud but not sure if this could be done through Crowd on DC.
Actually I prefer to have this feature for audit reporting purposes and would like to have it through atlassian products

Crowd is a user directory/management system, it has nothing to do with the issues.
Same with Access - it's not going to report on issue history.
