I am trying to use the Automation tools in order to trigger an event to occur in the case of an assignee change. However, I cannot seem to find a way with the list of available triggers for custom automation rules in order to do this. Can anyone help me come up with a creative solution for this, or is it just not possible?

Native service desk automation rules do not include "Issue Assigned" trigger. You can try Automation for JIRA plugin which includes various options for automation. Please see the link below
