I am using Jira service management data center and i'm looking to hide issues from a request type(incident for exemple) to some users. Those users should not be able to see those issues even though they belong to the project. Doesn't anyone have any idea how i can make that possible??

You mean hiding them in the Jira Backoffice ?
Only way I see of hiding those issues is to setup Issue Security.
