We already worked with the Ticket-System a few years ago and would like to work with it now again. But we would like to use the old GUI (if possible) is there oppertunity to use the old GUI?

The short answer is no. Atlassian did roll out the new UI recently with no option to roll back. You can find more details about that in this support article, including answers to the (in)ability to turn it off.
