Information about version control of JIRA and Confluence clouds?

How can we get more information about the version control of JIRA- and Confluence-clouds? As far as I have understood, the development of the clouds is based on some kind of scrumban processes? Especially, we are interested in the steps related to the version release and its documentation and how the users are informed about version changes (if user uses e.g. continuous track or preview track). Where can we find more information about this?

The reason why I ask this is that I work for organization that follows certain regulations, laws and standards. These require information about validation processes related to the version control of essential software (or clouds).
