Hi there,
I would like to use Canned Responses plus Info (Error/Warning/etc.) Panels.
When I answer a customer manually, I am able to insert info panels using the editor. However, when I edit Canned Responses I cannot setup those info panels.
Could someone help me out?

Can you clarify on your ask of "Info Panels"? What are you trying to add to the canned customer's notification?
By default - Project settings >> Customer notifications UI, when one customizes a canned responses in issue events (listed in the UI), the variable one can add are limited to the following -
If this the canned responses that you are trying to customize, then it is not possible out of the box. You may want to search in Atlassian Marketplace for third party addons to provide you the additional functionality.
Another option is to create automation rule to execute "Send email" action with your customized context. Since I don't know what you meant by "Info Panels", I cannot determine if it is possible or not using automation rule.

Unfortunately, I don't believe it is possible for canned customer notifications. Those options are available for the Commenting operation only.
I would recommend you to either contact Atlassian Support (https://support.atlassian.com) for possible enhancement request or look for third party add-ons for your asked functionality.
