Is there a way to identify which / if any filters and dashboards are making use of a specific field?

No there’s no way to do that. Keep in mind that filters and dashboards don’t “use” fields. Field, may be displayed on a dashboard or within the results of the filter but they are not defined within a filter or dashboard.
