How to add states, sub state and operation states in Jira SM

We are currently trying to build Jira SM, with very little understanding on how Jira works.  We have documentation from Atlassian which we re trying to follow.

We are building out the assets in our sandbox, which we know is not a true reflection of Production but getting stuck 

We have built a schema and when it comes to state the ones that appear to be out of the box, don't reflect what we want the assets to be captured as.

Is there a way to do this so we have the drop downs we require ?

Create extra attributes, based on status or select.

You can add extra statuses in the schema settings.
