How do I remove the "Uassigned Types" from the drop down of the workflow settings? I only want the workflow to operate for Task, Bug, or Story.

You can't remove the Unassigned Types from this list because a workflow scheme always has to have at least one work type associated with it. You can delete all the others if desired but this work type ensures the workflow will still function if all the selected work types are removed from it. That said, if you don't have any work types unassigned to a workflow, it won't hurt anything.
@Susan Waldrip Thanks for the reply! So basically every workflow will apply to every work item type within an instance and there is no way to exclude certain work item types such as epics from the workflows?

Oh wait! So I can edit the unassigned types workflow to exclude the approval steps, but they will remain for Bug, Story, Task when I edit the workflow link associated with their worktype? Example, if I click on the link to the right of Unassigned types, I can update the approval rules for what that workflow should do for unassigned types, but can then edit it for the other types too?

Hi @Natalie Cotela , based on the last image in your post above, all three work types plus Unassigned Types are using the same "Enterprise Applications Workflow v.1" workflow. So if you change that workflow, it will affect all of those work types.
If you assign a different workflow to Unassigned Types, then you can make changes to either that other workflow to affect only the Unassigned Types, OR make changes to the "Enterprise Applications Workflow v.1" workflow to only affect Bug, Story, and Task work types. I think this is what you were asking to do in your original question? ☺️
