Hi there, is there a way to know how many customers have logged into the portal?
And then to monitor that?

Welcome to Atlassian Community!
When using Jira Service Management, the best way to check if a customer logged in to the portal is by checking on the Cog icon > User management > Jira Service Management.
On this page, you can see the “Last active” that shows the date and time of the last time they accessed the portal or if they never logged in.
