There's lots of great ways to learn more about Jira / Jira Service Desk Administration - here's a few options:
Learning Paths: The Atlassian University has some great courses and certifications - check out Jira Admin and JSD Admin - there are some free courses in both of these you could take!
^ This will get you started - from here, I would learn by trying. Working out what works best for your team will take some trial-and-error, so don't be afraid to try things and make modifications as you go along :)
