How do I create a security schema to request type on Jira Service Desk?

I'm an system analyst in my company and I'm configuring the Jira Service Desk.

I have a question about the security schema.

It's possible to add an security schema to a request type?

We likely to add a request type to program the employees demission, and just the agents and the requester can see this type.

How do I do this?

Welcome to the Atlasssian Community.

If my understanding is correct, I would advise the following : 

  1. Create a special Service Desk and (for example) name "Employee Demission"
  2. Create your request "Demission" for example, in this newly created Service Desk project
  3. You may disable request sharing (if you want)
  4. Assigne your employees that are going to resign to this service desk as Service Desk Customers, so only them can see the configured request type

Special service desk is the same that a New Project on Jira Service Desk?

By a special I mean 'dedicated' (i.e another). 

Because requests are not like issue when it comes to "security". Issues do have security scheme but requests do not.

Security schemes apply to issues, not requests.  So, no, there's no way to do this.
