You can click on an Organization inside a Project to see all of the Customers inside that Organization.  Most have this format: [First Name] [Last Name] (email)

But one is in this format: email (email)

How do I correct that user, so he has a First Name and Last Name too?

The URL of the page I'm talking about is similar to this: Service Desk/Projects/[My Project]/Organization/X

I found the answer. If you go all the way to Jira Administration (admin.atlassian.com), then you can choose "Manage Users" (or click on your instance and go to User Management.)

At first glance all you see are internal people and you think you've found another dead end. *But* you will be able to see the Customers, if you click on "Jira Service Desk" inside the USER MANAGEMENT section of the navigation (expand the navigation on the left, if necessary - it's in the gray sidebar, which may be collapsed, not the narrow blue bar.)

There's some really beautiful UX choices in Jira. But there's also a huge amount of missed opportunities that are pretty glaring to a new user. I feel like the UX Design staff must be sadly understaffed.  Just wanted to give a shout out for the good and hopefully a gentle push to staff up the UX team.  :)
