How can I customize the Service Desk "Create an Account" screen? (Screenshot attached)

Is there any way to customize this screen in the new user sign up process? Here's a screenshot of the screen below:

Here's how I got here: New, unlicensed customer with no product or site access clicked "create account". After clicking the sign up button in the e-mail, I am brought to the screen shown above. I would like to add a "Company" or "Organization" field and/or other fields. 

 

Furthermore, I would like to be able to replace the Atlassian Cloud Privacy Policy with my own organization's privacy policy.

 

Is this possible in JIRA Service Desk Cloud?

Thank you for the details and screenshot.
Currently, it's not possible to customize the signup page for Service Desk. We have a feature request suggesting the implementation of this ability:

We also have a feature suggesting to associate the email domain to the organization, so customers would be automatically associated with the org based on their email address:
- https://jira.atlassian.com/browse/JSDCLOUD-4519
