I'm looking for a solution for deleting old issues, but I would like to avoid that this deleting would affect my statistics (amount of resolved issues). Any ideas?
Or any best practices about GDPR/DSGVO within jira Service desk?

There is no way of deleting the issues and still having the statistic saved sine the raw data informs the filter. The feature wasn't built that way.
One option would be to capture that on a confluence page by manual input.
Another option would be to download the data, anonymise it and keep a separate chat.
Another wonky option is to use automation and a proxy project.
When an issue is created in your project you create a new one in another project. I think you could use another automation rule to keep both projects in sync and this way you'd be able to obscure/anonymise the data you need to delete and still keep the metrics you want. You'd have to use the gadget with the proxy project tho.

It guesse the option with the automation and a Proxy project is a bit to overelaborated.
Maybe we'll try the option with the confluence page…
Or just waiting for the DSGVO/GDPR improvements for Jira...
