Is there a way for a group of people to receive an email notification when a specific change in the status takes place? At the notification type the option 'An issue is updated by a workflow transition' applies for every change in the transition, if I get it right.

Yes, it is possible. Two methods come to mind.
The easiest way is to use automations. You can set up an issue transition trigger and assign a "send email" action, as shown in the image.
However, I find it more interesting to set up a post-transition event by editing the workflow. You can assign an event to be triggered after the transition occurs, and then the event can be configured in the notification scheme to send an email to specified users or groups.
Correct – This can be achieved through several options, but in my opinion, the easiest way is to use Automation for Jira.

Alternatively, you can send a custom notification through the post-function of the workflow, but this approach requires more effort to configure and maintain.
