Before deleting a workflow, please ensure that it is not associated with a workflow scheme or project. If that is the case, remove the workflow from the scheme first.
The steps to delete the workflow are:
NOTE: Jira Administrators permissions are required for deleting the workflow

Thank you very much for your answer, the issue is that they are copies made in flow nesting and I can't see where to remove these copies (attached image).

Kindly clarify more on 'copies made in flow nesting'.
Also, as you are a site admin, can you find these workflows from the admin panel. The steps are the same as mentioned previously.

Thanks! @Gaurav When you make a modification to the flow, the system gives you the option to save a copy, nested on the previous one. It is these copies that I want to delete

All these copies are saved under 'Inactive Workflows'.
Kindly follow the steps mentioned in the previous comments, and once you are on the workflows, you will get the option to navigate to the 'Inactive workflows' from the top.
From Inactive workflows, find the workflows to be deleted and using 3 dots on the right-hand side, delete the same. The screenshots for the steps are shared below.
