In One my projects tickets get auto unassigned after closing them also no logs were recorded in the ticket activity/history who makes the assignee field "un assigned." I don't have any post transition functions or automations rules configured to this.
Note: I am using jira data center v9.5.0

No Jira doesn't have an inbuilt feature for this.
This should relate to the workflow post-function or an automation rule.
If there is none, check installed app, that might offer the functionality or a script that is running or is the database update via queries?
I would suggest to go to the logging on the instance(s), an check if there is any info related to an issue when it closes.
