Different SLA´s for different organisations

Hi 

I try to set up different SLA for different organisations in same project 

I have try to create a JQL question, but I get "Error in the JQL Query: Expecting a field name at the end of the query."

Here is my JQL: issuetype = Incident AND priority = "P1 - Critical" AND Organizations = xxx

XXX is = a customer name. 

How do I set this up ?

XXX should be an organization name not a customer name.
