Is there a way to customise what fields customers can see on our customer portal?
I would like them to see who is assigned to the ticket, but currently it only shows the description and priority.

Sadly no, by default assignee is hidden from the portal and the customers cannot see them. The assignee field in the request type screen is greyed out and cannot be changed.
