Customers are able to log into their portals to submit tickets to our team. However, they are also able to cancel or resolve tickets. How do I remove those options from their portal?

This is controlled from the workflow. If you open up the workflow and click on the transition you want to hide from the customer you have the option to disable that transition for the customer.
