Custom Priority Lists per Projects

However, It does not seem as if we have the "Priority Scheme" tab, I have a full Jira/Atlassian admin license, and unable to see said tab. 

Any help would be greatly appreciated

The option to set priority scheme per project is currently not available for Jira Cloud and is available only for server?DC version of Jira. This option is currently under consideration for Jira Cloud. Check the following link: https://jira.atlassian.com/browse/JRACLOUD-3821

As a workaround, you can use a custom field instead of default priority field to configure priority on project basis.
