I accidentally changed a status that was assigned to me to cancelled instead of completed. How do I fix this without having to re-enter everything from the officer?

Someone with workflow edit permissions should be able to add a transition to the Canceled status to reopen it to another status. Once that functionality is added, then you can simply move the ticket to the right status.
You will need to contact your site's Jira Admins to determine how your issue's WF is designed. They may be able to help you further.
If you are the Jira admins, then please provide us your WF setup associated with your issue, so we can further look into this with suggestion.
