I want to change the organization which pay for license in one project (but only in this project). One company pay for everything now. What i have to do and where can I change it?

You can not pay licenses on a per project base, payment to atlassian is always the full amount for the complete license.
You will have to do the payment per project internal or split your instances and get your own license.

I still do not understand what exactly you mean.
Projects are not run by organizations, projects live within a jira instance that is run by someone/some organization which probably also did the licensing. Maybe in your case there is a organization that is responsible for the project, but that it something you have to check with the ones who are responsible in your company.

If you have a Server or Datacenter license, ask your vendor on your next renewal to use another adress.
If you use the cloud service, please have a look at the billing section, there should be able to change that, if I remember correctly (you will need site admin permission to do this).
