Can you change the default search words in the KB search bar?

Unfortunately not in cloud using delivered functionality.  You can get the app refined theme for cloud which would allow you to make the change.

This does require an additional cost but you can install it and verify it is what you want via the 30 day trail.  Hope this helps.
