Yes, you can install it on CentOS (it's one of the most popular OS's to run Atlassian stuff on, and the one Atlassian first test against)
What help do you need? "Run installer, answer easy questions, log in" is what you need to do to get started, and works perfectly unless you do something really odd.

I've installed both Jira and Confluence on Centos 7 and there's nothing difficult. I also usually switch from firewalld to iptables on this OS. Oh, and don't forget about fail2ban or similar to keep your ssh access secure.
